Ingredients:
I romaine head ~ chopped
1 cup of cherry tomatoes ~ cut into halves
1 mango or half a pineapple ~ cut into cubes
¼ cup coconut flakes
Grilled chicken breast ~ sliced into strips
Dressing ingredients:
Olive oil
Dijon mustard
1 lime
¼ cup of pineapple or orange juice
Some salt
Directions:
Grab a big bowl to hold all these beauties. Throw in the lettuce, tomatoes, pineapple or mango. Mix. Then place the chicken strips over and across the salad. In a separate bowl, combine the olive oil, mustard, salt, pineapple or orange juice, and squeezed lime. Notice how I didn’t add any measurements beside the dressing ingredients, this is because I believe it’s all about eyeballing. Because what may seem like too little oil for me might be too much for someone else. Whisk the dressing until well blended and pour over your salad and chicken. Serve.
