Avocado Chicken Salad

Ingredients:

1 medium avocado ~ sliced down in length

1 romaine head ~ chopped into bite size pieces

¼ cup cherry tomatoes ~ sliced in half

1 large cucumber ~ sliced into circles

1 small red onion ~ sliced into circles

1 chicken breast ~ grilled to your preference


Dressing:

Store bought italian dressing

Or

Olive oil

Italian seasonings

1 lemon

1 garlic clove

Salt


Directions:

In a large salad bowl, arrange the lettuce, cucumbers, tomatoes, onions, and avocado to how you’d like for it to look. I’d start with the lettuce on the bottom then add the rest of the veggies going down in rows.

Grab your grilled chicken breast, I have a recipe for grilled chicken you can quickly check out if you’d like an idea on how to cook it, but cook it how you’d like with your own seasonings. Slice the chicken breast into ¼ inch thick slices. Arrange across the salad or give it its own row like the other veggies.

Finally to make it easier, I would just use a store bought italian dressing. However, you can make your own as it’s always best to do so. Of course, I have my own italian dressing recipe but you can quickly whisk together in a small separate bowl some olive oil, 1 minced garlic clove, some italian seasonings, some salt, and squeeze a lemon over.

Drizzle either dressing over your salad and toss it lightly. Eat up!
