Ingredients
~a can of black beans-drained
~a carrot-grate coarsely
~some cabbage-slice lengthwise
~an onion-minced
~green onions
~a garlic-minced
~dijon mustard
~ketchup
~olive oil
~vinegar
~paprika
~garlic and onion powder
~salt of course
~vegan mayo
~maple syrup
~whole wheat buns-toasted
Directions
For the slaw, grate the carrot, slice the cabbage into long thin strips and cut the green onions into 1/4 inch squares. In the same bowl or in a separate, mix together the vegan mayo, dijon mustard, syrup, vinegar, salt, and onion powder. Thoroughly combine the veggie mix with the dressing and you are all done with your coleslaw.
For the bean burger, add some oil to a pan over medium heat. Place the onion and garlic in. Once softened, add in the beans from the can but only after draining into a colander. Then begin to combine in the ketchup, mustard, soy sauce, vinegar, and seasonings. Allow to simmer. Once complete, place atop sandwich bread of your choice along with a dollop of the coleslaw. Eat up!
