Ingredients:
A feta cheese block
1 medium red onion
1 cucumber
3 roma tomatoes
½ cup of pitted kalamata olives
Dressing:
Olive oil
1 small lemon
Red wine vinegar
Dried oregano
Dried basil
Garlic powder
1 teaspoon of honey
Directions:
For the dressing combine all ingredients together in a small bowl and whisk. Notice I didn’t add measurements near the dressing ingredients and that’s because I want you to eyeball how much you believe will be a good amount. Changing up the oil and vinegar ratios or how much salt you think is too much. Have at it sis!
For the actual salad, chop the tomatoes into cubes. Do this with the cucumber as well. You may also do this for the onion or slice down in half
into circles. You may slice the kalamata olives or leave them whole but do try to make sure they are pitted as it is pretty annoying taking each pit out individually yourself by hand. Finally grab the feta cheese block and cut into cubes. Go crazy on this step as the cheese is the best part or for me at least lol! If you don’t have a whole block of feta cheese lying around please know feta cheese that has been pre-crumbled works just as perfectly.
Now like we do any salad, combine the veggies with the dressing into one bowl large enough for mixing without any being thrown out while mixing because that is the worst -.-
