Ingredients:
5 Potatoes
1 Green or red bell pepper
2 green onion strips
1 celery stalk
4 hard boiled eggs
1 cup of mayo
Salt
Garlic and onion powder
Directions:
Before boiling your potatoes, peel and chop your potatoes into cube sizes of your choice. You may use any kind of potato that you love even if it’s a sweet potato. Different kinds take different lengths of time to boil but boil your potatoes until they are tender or firm enough to stab a fork through. This should take about 15-20 minutes.
After boiling, drain your potatoes and throw them into a bowl big enough to hold them plus room for the dressing when mixing.
Chop the boiled eggs to your size of preference or cubes. Slice the green onion into thin strips. Chop the celery stalk into cubes and do the same with the bell pepper.
Add the bell pepper, onions, eggs, mayo, salt and seasoning all over the potatoes. Combine and place in the fridge. It’s best to eat this salad on the cold side, personally I’ve never had it room temperature but if you have and love it, let me know!
